According to Ayurveda, the best time to prepare the body for Winter is in the Autumn, by clearing out excess summer heat and beginning to store nourishment deep in the tissues.
This menu is designed specifically to help clear the body of excess Summer heat and start to bring nourishment to the deeper tissues in preparation for Winter.
Fall has qualities of cool, light, dry, rough, mobile, clear - but early Fall can also be HOT, so we will settle on a final menu within a week of the class.

Raw Beet Slaw with Lemon and Mint Beets are powerhouses of Ayurvedic blood cleansing and rejuvenation. -or- Japanese Pressed Red Radish Salad Radishes are a wonderful for fat digestion, decongesting the gall bladder, and cleansing the liver and the blood, which can get vitiated during the heat of Summer. Dal Saag (Yellow Mung bean & Spinach stew) Dal is an Indian word for pulses or lentils, and saag means spinach! This vibrant yellow mung bean Fall lentil stew with fortifying spinach is easy to digest, quick to prepare, and super satisfying! Pumpkin Chia Pudding (Pumpkin is cooling and astringent, great for the gut especially after a hot and humid Summer! |
